Piure de cartofi pufos, in general abordam foarte des piureul la masa folosindu-l ca si garnitura, aici este o reteta simpla as spune dar cu care puteti sa va jucati cum vreti cu condimente si verdeturi.

La piureul de cartofi sunt mai buni cei galbeni cu coaja usor crapata si pare murdara. Acestia sunt mai fainosi si cremos continand ceva mai mult amidon. Daca folositi cartofi cu miezul mai alb nu necesita la fel de mult lapte, ei fiind mai aposi. Vechiul piure se face cu cartofi fierti in coaja si apoi curatati, dau o aroma si un gust mai profund de cartofi si este foarte bun. In aceasta reteta eu am curatat cartofii si am redus din amidon daca i-am taiat in bucati mai mici si i-am spalat bine.

Cartofii curatati i-am pus la fiert cu un praf de sare ( sarea se pune dupa doua clocote). Cand au fiert i-am scurs si zdrobit cu mixerul ori cu telul de cartofi, foarte bine. Adaugati unt si mixati, turnati laptele fierbinte treptat si tineti mixerul pana devine pufos. Serviti ca si garnitura ori cu ceapa verde calita in putin ulei, gratinat la cuptor cu cascaval. Cartofi copți de două ori Când ai avut ultima dată cartofi de două ori la cuptor ?! Iată două variante ale unei rețete clasice: una cu brânză cheddar și slănină, cealaltă cu brânză albastră și arpagic. Acestea sunt o garnitură atât de bună pentru o masă de sărbătoare sau o cină de duminică. 3. Trecem la pasat cartofii

Am încercat mai multe variante, de la cele clasice, apoi trecând printr-un pasator de cartofi, manual, cu găurile mici, până la un robot de bucătărie.

Cu robotul am terminat cel mai repede dar nu a fost chiar cea mai bună variantă. Cu procedeul clasic, manual, a rezultat un piure neuniform.

Cea mai bună alegere a fost pasatorul de cartofi cu găurile mici și uniforme.

4. Cum obținem un piure cremos

Am încercat lapte, unt, cremă de brânză, chiar și ulei de măsline.

Cea mai bună combinație de ingrediente a fost cu unt și lapte la care am adăugat o cantitate mică de smântână.

5. Să adăugăm ceva extra

Și aici am avut ceva de lucru, am încercat mai multe variante. Ingrediente pe care să le adăugăm la final sau ingrediente adăugate la fierberea cartofilor.

Am ajuns la concluzia că este foarte bine să adăugăm în apa în care fierbem cartofii și puțin usturoi pe care putem, sau nu, să-l pasăm împreună cu cartofii.

Așează cratița cu cartofii zdrobiți pe aragaz, la foc mic și mai amestecă cu lingură de lemn pentru câteva minute, până ce se formează o peliculă albicioasă pe fundul cratiței.

Cum se adaugă untul și laptele în piureul de cartofi

Așa cum am stabilit inițial, untul trebuie să fie gras și rece, iar laptele fierbinte. Adaugă în piureul de cartofi bucățelele de unt și laptele cald, iar poi amestecă piureul de cartofi și ingredientele adăugate cu ajutorul unui tel. În final, poți asezona piureul cu sare, după gust.
